I'm capable of reading and typing kanji fairly well with my vocabulary, however I can't envision most of them myself despite being able to recognise them in text.

I feel like Japanese is considered so difficult in part because the teaching process is so fucked, forcing Japanese into English logic (and obviously failing) instead of distancing from it and teaching students Japanese structure and logic from the ground up. After Rubin and Dolly, it's a crime that textbooks like Genki don't teach zero pronouns, which are absolutely fundamental to understanding how Japanese works as far as I'm concerned. To this day, if you google that shit, you'll get two things - links to Dolly's website, and scientific papers by Japanese linguists. It's ridiculous.
