Assuming she wants to do competitive battling then she'll probably play Sword/Shield, as for how far you need to go you can trade as soon as you begin the game but if you want to battle with her or get some good pokemon to trade with her it might be better to finish the game first.
Sword/Shield aren't very long though and are pretty easy, so it shouldn't be a problem.
