I used to watch anime for two years before I started actually learning Japanese, and that was only enough to understand the nuances of certain grammar concepts/verbs like ある、なら、するな、ばかり、and the sentence-ending particles (なぁー、ね、よ、よね、わ、ぞ、ぜ) along with a handful of phrases/vocabulary (性格悪い、なんでもない、大丈夫、だよね、やはり、面白い、おかしい、懐かしい、夏休み、邪魔、etc)

So pure immersion can only get you so far, you'll need to make an effort to actively study grammar, at least (and some basic vocabulary so you pick up more than a "私は。。。を。。。ました" when you hear a sentence) - once you have a foundational understanding, you might be able to return to immersion and add more unfamiliar vocabulary and grammar to your "need-to-learn" list as you go

I remember Takagi-san as being not too complex, but to actually get anything out of immersing you'll still have to get up to around N4 level since real Japanese isn't just made of sentences that use the same few grammar concepts (I consider myself a bit above N4, but still wasn't able to grasp all of a New Game episode although it was fairly simple slice of life because of unfamiliar vocabulary and slang)
