Actually, some fish can survive without water for quite some time. They even change their metabolism so that they excrete urea instead of ammonia (ammonia is toxic, so accumulation of it in the environment will kill the fish, but this isn't a problem in water where it's diluted. When they go over land, obviously things change. ) Lungfish do this to hibernate during summer months in mud, and are notable in that they have true lungs analogous to those of tetrapods instead of modified gas bladders for breathing. The African lungfish is so adapted to land that they drown if they cannot breathe air.

Catfish and eels also frequently take trips on land, being able to survive on atmospheric oxygen for some time.
