What’s the best use for money? I’m around lvl 40 and have pet running a food store. It makes so much money but I don’t know what to spend it on. Weapons and armor aren’t worth buying and nothing else seems that expensive.

Buy deeds for expensive stuff first and foremost if you haven't already, especially the palace if you haven't gotten it.
Afterwards invest in stores. A very good idea is to hire a magic store vendor in your home and invest in it so they start selling potions of potential. You can also do this with other magic stores in towns you like to visit often. You should pretty much buy every potion of potential you see.

If your definition of late game is completing all the story content, then all the weapons are viable.
If your definition of late game is getting to the point where skills and stats start hitting their cap, then apparently armor piercing is king so I guess just try to avoid weapons that have a low pierce value. Apparently ranged weapon builds are kind of weak because of this although you can make up for it to some extent with ammo. That said you probably won't hit this point unless you're cheating, playing a mode that gives a huge exp boost, or incredibly autistic.

After looking at the pet stamina stuff again it seems like there's an energy pool for each ability that could allow it to be used multiple times in a row, I think I mistook it for total spam. Seems to be working, after some spam that presumably drains the energy pool, a shining wave only comes out every ~3 turns which is close to the 3.7 turns shining wave takes to recharge. All is good, aside from kills being stolen.

Ballistae have 40% pierce which is as good as it gets for non-artifact ranged weapons that use ammo. But really there's enough sources of lowering enemy defense that it's not much of an issue late game. A pet Claymore with proximity weapon and vopal procs and extra attacks can keep enough armor sheared off to be noticeable on bosses.

seven leagues is very outdated now that you can buy overworld vehicles, happybed is also not good since cupids drop them frequently
shift cores are the only wish-exclusive nowadays
if you can get to act 3 fast gain attribute scrolls can be good, if you can't get to act 3 fast, wishing for any of the items manytia sells can be handy, take a look at the wiki to see what they do
other items are also handy, light pens, sand bags, lightning storm/eclipse rod if you're going magic device, a particular rare weapon type.
There's nothing essential nowadays that you can't get through some other means.

The best place for info on other variants is going to be the Japanese wiki for elona variants. While we shit talk about Ano because he implements some pretty crazy changes, I think most of us still play Plus and its probably the most popular variant overseas. The game never explicitly says that she dies though, and most players seem to have mistakenly assumed that she was the Elea woman that Barius had testify at the end.
Originally it would have been made clear in part 2, but Noa doesn't seem to have it set in stone as canon or anything.
