Sacchin's been joked about since the Plus Disk for crying out loud. If Nasu wrote her a route instead of just killing her like always, it'd go against what he's been doing for more than ten years now. I think the only actual mention of a "satsuki route" was Melty Blood, but even then they quickly dropped it there for both Arcueid and Ciel liking Shiki with Satsuki not at all acting as Tohno's girlfriend. The romance doesn't suck whatsoever.
Nasu and the rest are just too fixed on the fact that Saber was originally a man.
As a romance, Fate is no worse than any of Tsukihime's romances, and it's easily better than Rin's in UBW.
Why? Because it starts off as dumb infatuation until after Berserker's fight. That's where Shirou and Saber start to see each other's past and only then do they properly fall for each other. They see how much alike they are, and Saber worries about it. But the date helps both of them, and the encounter with Gilgamesh only cements it as a good romance.

Also no offense, but Nasu hates everything he wrote before. Look at the UBW anime.
That trash is what you get when Nasu gets to change stuff that he didn't like in the original work.
Not to mention the retard has asked to rewrite everything that Ufotable adapted except for HF.
Guess which adaptation turned out better because of it.

They cut up Illya and Kirei's scenes, which made their last scenes less impactful. Like with Illya, they had to insert Iris there to reference Zero and make her sacrifice more emotional for anime-onlies. Shirou's suffering because of Archer's arm wasn't highlighted well either. If you only watched the movie, you wouldn't know just how badly the arm was affecting him, and it would seem like he got a direct power up instead. They also didn't explain what happened in the ending all that well, like Shirou's puppet body and Medusa staying, but I don't really have a problem with that personally.
That said, I think the movies did well with a lot of other things, like Shirou and Sakura's relationship as you said. Archer's last scenes in HF2 and "Can you keep up with me?" were great, as are most of Rin's scenes.
