Actually, most Touhou's are lazy bums who probably wouldn't put forth the effort to eat a human if they found a cripple crawling in front of them. Rumia more so, as she spends most of her time flying in random places and running into trees.

All you need to avoid being eaten by the two or so youkai who actually still try to eat humans is a pen and some paper to write "SPELLCARDO" on. Challenge them, lose, they're not allowed to kill you.

Youkai may simply be unkillable, period (like, say, fairies). Note how everyone's always talking about sealing them. Compare the entire UFO cast which people thousand years ago apparently really wanted to get rid of, and yet is now back unscratched.
