It is never said in red that Sayo is dead before she is found dead with George.

EP 4:
Shannon aka Beatrice decides to kill herself and Kanon after battler doesn't remember his sin.

However the food is poisoned, he dies etc.

Kanon's injury could be fake.
For example Shanon kill Kanon on the first twillight, put his body in the shed and disguise him as herself, for the face she put some gore set or whatever to make it seems like the body had its face half destroyed.

Later she takes the place of Kanon, till her encounter with "Beatrice", there she fakes an injury, with the help of Nanjo who is working for her, she then use Kanon's real body that she moved during that time to replace her.
There both Kanon and Shannon are supposed to be dead and she is free to act.

There must be a reason that made the murderer destroy the face of every bodies.
If they were all normal corpses, the people who discovered them could try to touch them.
But the corpses in such a state would repulse anyone, so nobody would verify up close that the body of Shannon is really her.
