Hello. I don't know if this is the correct place to ask for advice but I heard someone suggested to post here if I need help.

This is my first time buying a fumo and it seems I missed the train by a few days for Gift Online Shop. Other listed stores don't have any with a reasonable price. I have heard that there are "some" non-bootlegs on ebay (I've found some for a reasonable price) but how do I know they are not bootlegs? Should I just wait until Gift Online Shop releases a new batch?

Best way to not get a bootleg is by avoiding marketplaces. Buying directly from Gift or official resellers is the way to go here, and it also doesn't come with aftermarket prices. If you want to go for aftermarket then I'd at least suggest yahoo auction japan (YAJ), Surugaya, Mandarake or Rakuten as these are all more trustworthy than Ebay. If you really really want to go for Ebay then at least make sure you buy from a seller with photos and not stock images, and don't ever buy from someone shipping from China.

Lurking the /fumo/ threads everyday should be a guarantee. If you make an account on the gift website then you can subscribe to their emails. Though if you don't want to miss it again I'd recommend having multiple options, just in case an email fails to get to you or you miss a tweet etc.

If you're looking for a good starter mirrorless camera (DSLM) from Fujifilm, I'd personally recommend getting one from the X-T series, rather than the X-Pro series. While the X-Pro and X-T series usually have the same specs in terms of photo quality, I'd choose one from the X-T series due to it's central viewfinder, better weather proofing, and better/larger grip. I'm also pretty sure the X-T series frames carry more dials and buttons you can reprogram. Also what lenses/lens are you looking to get, or are you gonna roll with the kit lens?
I own a X-T3 with a prime 35mm lens, so interpret this as shilling if you must.

Older ones are a bit softer. The design has also changed a bit between 1.0 and 1.5. If you look at any 1.0 and 1.5 next to each other it should be obvious.
In my opinion you should go for the one that you like the look of the most. Do keep in mind that the 1.5 versions get re-released which means that they are probably a bit cheaper/easier to come by than the 1.0 versions, assuming you buy them from Gift directly of course.
