My Japanese dictionary says it is a expression of politeness or something.

desu comes from de-arimasu or the older de-gozaimasu, meaning 'it is so' since they are so polite, english had a similar saying in the dark ages, but asian countries had such politeness bread so strong along with imperiliasm, that they kept their fedual system until... well some still have it, japan pretty much got rid of it after a million people were killed of it in a week after WWII

Just "I am a fireman." If you're going to be more polite and formal, it'd be "Watashi ha faiaman." If you add "ka" to the end of "desu", you get a question. "Ka" is the traditional ending for a question.

more specifically, it's the command form for 'yameru'. the verb which means 'to stop'.

conjugating into the command form tells someone to do the verb you conjugated. you wouldn't use 'yamete' to mean 'stop' the noun (like bus stop). it's only a command telling someone to stop.
