basically you:
* get a pattern from somewhere (or design them yourself)
* trace pattern pieces onto material
* stitch pieces together
* turn shit inside out
* fill it with stuffing
* close it up

Patterns are basically the same as an unfolded 3D model, split into pieces.
For instance, in picrelated two flat triangles can be sewn together to create the cat's ear.
Turning a piece inside-out generally hides the sewing lines.
The more complex the shape, the more of a pain in the ass everything becomes.
There's like a zillion learning resources on google/youtube if you're really interested.

Technically you could 'pirate' a doll if someone cuts his doll apart, flatten the parts and take pictures of them to create a pattern others can copy.
It's still a fuckton of work though. Buying/comissioning one is probably cheaper in the end.
