Why?

I've been studing for 2+ years but never bothered with listening. Can I practice it by watching Gaki no Tsukai and Vtubers or do I have to go the boring route and search for graded stuff?

Each kanji having multiple readings annoys me so much.

dude listening is the easiest one
just watch shit without subtitles and in about a year you can understand about 90% of the stuff you hear.
I did this and after a year - 1.5 years I basically understand everything I hear.

There are difficulty levels though, so I wouldn't start with gaki and then get discouraged if you haven't done any listening at all.

for me I would say the difficulty goes like this:

basic story dramas (high school, love story, etc)
working dramas (business, detective/law, medical)
basic variety (idol stuff)
real variety (the stuff japanese actually watch)
news

Of course you could just go to variety from the beginning, but my level was way too low for that so I started small and went up from there

At some point you will have to learn grammar, vocabulary and kanji etc. Otherwise you will never be fully fluent. You can't just absorb vocabulary by watching anime or playing visual novels. It doesn't work. You might learn some words here and there, like chotto matte!!? But you wouldn't know that matte is the same verb as matsu or machimasu.

Wanikani is an excellent primer for learning how to read if you actually follow through with it.

I got to 60 and not only learned half a dozen thousand words, but also how to expect kanji to be read even in many words I’ve never seen before. Dictionary lookups are a breeze now for the most part, and new words I come across stick much easier either because A) I recognize the kanji and the familiarity makes it easy, or B) wow, I’ve never seen this kanji before, so it stands out a ton.
