Quick Japanese lesson for you, OP.
The Japanese only write East Asian names (i.e., Japan, China, Korea, ect.) in kanji. For words or names from countries that don't use kanji, they use katakana, hence ベス is the way it's written in Japanese.

I think 辺須 is the best. because these kanji are used for Japanese family name, like 渡辺（watanabe,watabe) and 須藤（sudou).
