Guitar Freaks is a little better as soon as you reverse the scroll. The major crux is only being able to have one finger on a button for single notes unlike GH/RB where you can fret the lower notes as well. It's just something that takes getting used to.

Pop'n is just buttons, SDVX knobs are easy to find, IIDX needs some work for the turntable but if you're making a custom cabinet you should be able to make one, Reflec Beat and BeatStream are just big touch screens, DDR/PIU can have DIY pads but in public people use real arcade pads with custom cabinets at most, the Taiko Force Lv5 exists so Taiko should be possible, and for GITADORA (drum) you could buy a Yamaha DTXPRESS drum kit.

Only IIDX and Pop'n would suffer from not having access to the individual keysounds, other games can have functionally identical "copied" charts added before proper rips are available.
