Just because the sex is unknown is no reason to make the number unknown instead. Sex being incorrect doesn't really matter that much for pronouns when the individual is clearly identified. Whereas number can make the identification itself vague since plural could refer to many other things, including identifying multiple posters within a group posting as the same character, or the readers.

The way I see it, if information is known, like number, it's foolish to throw it away just to cover some other unknown.
No one does the inverse, saying he/him for a known group. It's hard to even think of an example of that because it feels so wrong.
Is sex so important that it's worth sacrificing clarity just to highlight that it's an unknown?
Is it really that difficult or scary to either let it go, or correct it in the cases it actually matters?

Singular they/them does have a fairly notable history of use as well. But it's most often only when number is vague or unknown. Like, for a modern example, an anime release group that may or may not be made up of multiple people; or a project of such a group. "They did a good job with the typesetting".
However, there is plenty of normal singular they/them for known singulars too. Some people would argue that such things are incorrect from the get go, and caused by a lack of education anyway. But a lot of language is like that. Use sets precedence.
Even the ever popular "Sweet Victory" has it plain as day in its lyrics. I think that gets a pass for melodic fluency though.

Sadly, the only other language I know off hand is Japanese. They have their たちs and らs for pluralizing where it's necessary; but often leave it up to context otherwise.
Then again, most of their pronoun type words are gender neutral to begin with. Trying to translate those into English when gender is intentionally vague is painfully annoying (Usually I'd just avoid pronouns entirely there, opting for names and "this person" type shit instead). So English could certainly use gender neutral pronouns for such cases. But I really don't think bastardizing they/them is the answer.
