Byakuren, a Bhuddist monk, there's really not much to theorize. One would assume normal human pooping habits and cleaning with the regularity and discipline of a monk. Since she was one to keep up pretenses there's a chance she didn't even fart in public and avoided rude behavior in general.

Then what's with her backstory, and seeking to become immortal? She feared losing her powers, and started helping youkai instead of exorcising them. Sure, she's probably the most saintly character in the series, as befits her name, but she isn't a buddha.

Her backstory happened more than 1000 years ago, before that long period of imprisonment, and she has now expressed, in many occasions, views that break with that flawed past, especially the immortality you mentioned:

You're forgetting that Byakuren had become a youkai magician by then. She wasn't human anymore.

The disappearance of magic due to human disbelief could have cost her own subsistence. As I said, she channeled the idea into something morally greater anyway. Note that the first problem (persistence of magic) is no more now that she's in Gensokyo, which is a supernatural reserve, so she doesn't have that ulterior motive anymore anyway.
