Have you tried OBS? It's meant for streaming but it can record videos too. I haven't had any issues on it except with very old games.

I think what's happening is you're taking a screenshot of your full monitor (but only the portion with the game, everything else is black), then downscaling it to the size of the game.

If you're using OBS, I believe you need to go to settings -> Video -> Base Resolution and set that to 640x480, and keep "downscale" at None.
