Putting a surprised expression on her face is proof of nothing, coming from the most deceitful character in Tsukihime with the greatest amount of self-control. She still needed Tohno SHIKI to die and she couldn't very well sic Nanaya Shiki on him if, in the moment of Akiha's death, she revealed that all was going according to plan.

I wouldn't take every single word of a fan translation literally.

In the nasuverse, plot armor is always the single most important factor in a character's death, not the medically critical nature of any wounds they suffer.

And he's immortal until Saber is no longer his Servant, so that explains that.

She was not stabbed in a critical area. She would have died of exsanguination had she not known healing magic, but she's a fucking mage, so derp. You could even argue that Kirei wasn't trying to kill her at all, seeing as how he could have stabbed her anywhere else just as easily.

Before getting wasted by Sakura, he uses Kyrie watchamacallit to destroy Zouken after manhandling Assassin. Despite Zouken's apparent fear of this attack, he later shows up in the route just fine due to some vaguely referenced HAX reason. He is later pulled out of Sakura's chest and destroyed. He STILL comes back, this time inexplicably, until Ilya talks him out of fucking refusing to die.

You can live for a few minutes with a severely damaged heart, actually. Seeing as how he still died from it, that's explanation enough.

Zouken was functionally immortal, not literally.

His immortality wasn't to be taken for granted. He was only technically immortal through his use of the, uh, worms.

His fear of Kotomine indicated that Kotomine's attack had a way to override this.

Similarly, he began pleading with Sakura once she grabbed the worm in her heart, described vaguely as Zouken's true incarnation. That was destroyed.

The final time he returns to the scene, squirming around as a worm before Ilya questions him, it is not explained how he survived.

When his immortality was explained, it was explained as not being true immortality, but a chain-possession spell that gave Zouken something similar to it, as long as he had a host and worms.

Considering Arc, she is a being that after her body was destroyed with an Absolute method, she could come back after restructuring it from scratch.

She is for most intent and purposes a being with near no limits. That was the damn purpose of their creation, immortal powerful elemental fairies.
Even in the True End, she does not die.
She just can't suppress her bloodlust.
Good end where she gets some more energy so she doesn't slip away, is not really 'plot armor'. It's just better circumstances, hence' good end'.

And...canon or not in Tsukihime is a touchy subject.
