The kanji sometimes have some redundancy. Dropping a part from a kanji doesn't always lead to confusion with something else. For example, neighboring - 隣. Dam, rice, dancing. Even if you ignore the dancing part, there's no other common kanji with dam and rice. So I don't worry about it. I ignore parts of many kanji.

it's official MEXT guidance to write animal names in katakana, so it's not just "to make it easier for kids". it's because if there's too many kanji for animals that the generic rule has to be that or they'd have to pick which kanji are fine out of the thousands for animal names. Baka is also not written with kana to make it easier to read for younger people. I did this at the start but it didn't work too good for me. I'll get mocked for this but whatever, it increased my retention by 20% and decreased my time spent on anki a lot. I make physical flash cards to learn new words and use anki just for reviews. When I encounter a new word reading, I add it to anki as well as to a word table which I then print so it doesnt take much time at all (I made handwritten ones at the start but found no difference when I switched).

It's extremely difficult for me to remember new words by looking at them on a screen. When I hold the paper flash cards in my hands I can get through 30 new words in about 15 minutes on a good day. In the end you need to determine how much time you are willing to spend on anki. I think the amount of time I spend on it results in enough benefit to keep doing it like this.
