Why? He was talking about power, meaning strength, endurance, and agility. Instincts are something a person develops or something that's granted as a skill (like with Saber). Arcueid doesn't have any experience as a warrior. She's more of a predator. If anything, her strength is much more likely to dull her instincts because, in her own words, she can only be hurt and killed by a handful of things in the entire world.

Personally Saber is my favourite out of the three, but I can understand why some wouldn't care for her. Sometimes I wish Saber's route came last. The first route would be Shirou having the stupid fucked out of him by Sakura, the second would be his confrontation with Archer in UBW, and the last route would be him sticking by his ideals with Seibah and getting a last-episode type happy end after much suffering. Overall? Hard to say. Each of his works can be very inconsistent in quality in some areas. For instance KnK, Tsukihime, and even F/SN are extremely rough around the edges and quite amateur. But they offer a lot of ideas and unconventional story telling that makes them interesting precisely because it was done by an amateur like Nasu. His later works like Mahoyo and CCC are undoubtedly more refined, but I find that they also lost quite a bit of his bite in writing. Hell, if it weren't for the amazing visuals of Mahoyo I would say the VN would be kind of disappointing, and it is sort've is even with the visuals. It's a very refined disappointment, though; it's Nasu at his best in terms of effective pacing.

Personally I like Tsukihime and KnK the best because I prefer a smaller scale of story telling, with more intimate character drama and atmospheric urban settings. But I do feel as if Fate is comparatively more refined and has more interesting things going on thematically.

Where did even see us dismissing it? The reception in this thread was relatively positive. It's guaranteed to be far better than FGO, since it's the focused work of a single author, in a medium that's actually proper for storytelling.
The misgivings that people do have, of course, have to do with forcing the "Fate" brand and Servants onto it, which can pretty much be blamed on FGO's success too. But it's still better than nothing, those spin-offs like Case Files and Strange Fake, even though they're not the proper Nasu project everyone wants, have been my motivation to keep up for the past 3 years, and the only genuinely enjoyable content to me.

The manga is basically Arc's route with some added manga-only scenes. The VN has a lot more to it including Ciel's route and the far side (or is it near side?) routes, meaning Akiha, Hisui and Kohaku's routes, and those are very, very, different from the near side (or is it far side? forgive this baka) routes. I don't remember if the manga has any major spoilers for those routes but you should probably read the VN first if you're interested. I'd say the VN is definitely worth reading and the manga is pretty fun too.
