watch raw anime as well so when you read your brain knows how japanese is supposed to sound but don't expect to learn much from it with your low vocabulary and poor listening comprehension

don't force yourself to rewatch stuff that you don't want to. actually being interested in the anime you're watching is the most important thing.

i would argue that it's actually better to watch new shows. when you rewatch a show, there's not much motivation for you to pay attention and actually try to figure out what people are saying since you already know what happens and can follow along anyway just based on your memory. when you watch a new show for the first time, however, you'll be more likely to pay attention to the dialogue since that's your only path to figuring out the plot (besides whatever surface understanding you can glean from the visuals and such).

just pick up a bunch of shows at the start of each season and drop whichever ones don't hold your interest.

you could ignore it, or you could try rewinding, trying to catch words and then looking those words up in jisho and seeing if you can figure out what was said. i think it's a good thing in general to try to catch words which you feel are important and look them up, but don't overdo it to the point where you're constantly pausing and rewinding or your watching experience will just feel like a chore and you won't want to do it (pic semi-related).

You can learn how to identify words without even knowing what they mean, which makes this process easier. Find someone or something on youtube that talks clearly and enunciates, bring up the CC for it, and follow along. Repeat a clip many times to get a feel for what is being said. Podcasts are nice for this.

Also unironically 真夏の夜の淫夢 parts 1-3 if you're having trouble deciphering conversation. The recording quality is shit and they mumble, but everything is fully transcripted and you can use it as a jumping off point for similar quality tv stuff scattered around the internet. The more junk you listen to and decrypt, the more used to the language's sound you will get.

You're only at around 360 hours in that case which isn't all that much in the grand scheme of things. I wouldn't get too stressed out about still struggling with stuff at this stage, and I definitely wouldn't worry about outputting.

Consider that well-know AJATTers and people like Moogy who got good in relatively short time-frames would basically read and listen all day, so by the time they were reaching a high level around a year and a half into the process, they had probably invested a bare minimum of 2500 hours into learning Japanese by that point. Anyway, you might benefit from reading something easier than VNs and LNs like manga (doesn't mean you have to drop VNs and LNs, you can read more than one thing at a time). Since the language in manga is more simple, it should allow you to focus in on the basics more easily than you can with VNs and LNs which tend to have lots of long sentences and broad vocabulary ranges. You'd probably do well to watch some raw CGDCT anime as well.
