Not sure if Shirou has the skill to do something like that, but Archer certainly could. Gilgamesh could do the same thing.

I always felt the whole SHIKI CAN KILL SERVANTS thing was a bit over-stated. Caster and even someone like Rin can just spam ranged magic attacks, and even Saber could just use Excaliber, or protect herself with Avalon in a close fight. Lancer can use thrown Gae Bolg, since even if it gets destroyed it will still hit.
That said, Shiki wouldn't have much trouble against Assassin, and he can easily cut True Assassin's NP arm off if he can avoid the knife throwing. Not sure if Rider's Bellapheron is considered a ranged or melee attack, but there's always her Mystic Eyes. As for Berserker, I seriously doubt that even Shiki can kill him completely twelve times fast enough to avoid being crushed by him. Even if stabbing the point is an instant kill, Berserker is probably fast enough to bring his blade down before he can get stabbed twelve times.
