Sengoku gensokyo is pretty interesting. Has a decent story where some sort of event is held. Residents group into armies and fight each other for territory, gameplay is simple but better than a standard rpg (theres some sort of distance system, and characters need to be placed in optimal positions for their advantage attacks and whatnot.)

I remember Concealed the Conclusion getting bad rap around here, but I liked it enough. The story is interesting despite being tonally foreign to official Touhou content, and I like the mechanics and patterns. Music is also pretty great; I especially like the stage 4 and 6 bosses.

Disagree on Touhou Mother, it's a cheap bastardization of both series that fails to capture what makes either great. The first one is probably the worst video game I have ever played and beaten, but the fact I finished it must mean something.

As for others I've played, a rather well known one is MegaMari by the same guys who make the fighting games. Mechanically, it's a good recreation of the Mega Man games, but I never could get around to playing much of it. Not too big a fan of the level design, but you might find something in it I don't.
There is also a Pikmin clone I remember playing a while back, something along the lines of Shanghai and the Doll of Mystery. It's... alright, I guess? Very rough around the edges and not nearly as good as any of the originals, but I guess it sates my desire for a new one.

Koumajou Densetsu 2 is the best game associated with Touhou. The first one is alright, but has lots of flaws.

Suppression by Celestial is shorter than it should be and never gives itself a chance to really utilize it's bitch'n combat system, but it's still really, really good. And no, not just because it stars Tenshi.

Sanae Challenge is simple, fun, and super cute. It's sequel Sanae Challenge Fusion loses some of the simplicity, but is still a better game for it. Try them both!

There's also that Aya Ace Attorney game, but I can't for the life of me remember what it's called. It's pretty good, though doesn't hold up to the real games. Might be a couple of those actually.

This, 100%.

Gensou Shoujo Taisen is easily one of the best Touhou fangames out there. The gameplay and animations are top-notch. Each sequel is better than the last one, too.
The way it follows the Touhou canon plot and adds its own twists to it is interesting, as well.

LoT2, Touhou PDP, and Scarlet Curiosity/Youyou Kengeki Musou are really good, too.
