It's getting "retconned" because the VN is old and they want to bring in new fans, while Nasu also wants to expand on the lore and characters. A lot of stuff established by Tsukihime is still referenced in very recent works like GO, Case Files and Strange Fake, it's not like Remake will get rid of all that.
Old works are never outright erased in Type-Moon, they're often transformed and re-worked into new ideas. I don't see any issue with talking about Notes when it's a perfectly fine setting that might still be used in the future (and hopefully not in gacha trash).

One of the more used tricks in the filler seasons of Naruto is the mid-pause conversation in combat.

In the first season there is almost no mid-pause conversation. It's all smooth and slick fights. In the second seasons there is maybe one minute of fights for ten minutes of dialogues. You know I'm right. The second season of UBW is a joke. It's barely decent.

You can watch the first season with everyone, and they will be enthralled. The pacing of the second season is atrocious and you'll lose almost anyone with no prior experience in Fate. Far too many dialogues that go nowhere, far too many sideways into nothing. Also they don't properly explain Shirou mindset and thoughts.

Serious talk: the UBW route go faster as the route advance in the VN. The fight with Archer is a perfect shonenshit in the VN. Full of determination and good grit. In the anime it is far too static, and goes on for 3 full fucking episodes. Where they watch each others and do nothing.

Watch it with a normalfag. The normalfag will love the first season, they will yawn in the second season.

I don't think that's a fair comparison. For one, those scenes are very, very narratively different and were handled by different storyboarders. Plus, budget doesn't have a direct connection to animation quality unless your definition of quality is exclusively number of keyframes. It's more likely quality dropped due to time constraints limiting retakes and corrections. Animation is dirt cheap, just time consuming. There were 9 seasons between Fate/Zero and UBW S1, but only 1 between S1 and S2. There's no doubt production issues put them behind schedule. You're probably right about the crack, though.

I was hoping you were being ironic because "20 anime and naruto fillers" is extremely little experience with anime, that just means you were never very into it. Which is fine, but don't assume stuff about an industry you're new to.
And regarding UBW, I agree that the second season fights looked worse and were also shorter, but their scarcity and focus on dialogue comes directly from the VN. The first half of the route is more about showing off the Servants in the fights, the second is wrapping up everyone's character arcs. In particular Shirou vs Archer is barely a fight in the VN, more of a yelling match and internal struggle. Giving a full episode of Archer talking before the fight even started was actually very in line with the fight/talk ratio in the VN.

No. That is not true.

The combat between Shirou and Archer is one of the most dynamic in the VN. Shirou is sure, reflecting about his life choices, but always by making a move. There is very few pauses in the combat. It's all slick, good, shonenshit, where Shirou advance again a superior opponent while explaining why. I'd argue it is maybe the best and most dynamic fights of the VN, with maybe the HF finale.

It's not three episodes of static people looking at each others and talking full DBZ style. The second season of full of that.

Watch it with a normalfag, really. Oh, Souichirou is talking with Caster... And Caster is talking to Archer. And Archer is talking to Souichirou. And hum... The Archer fight lasts 2 episodes and a half. One of them is a long exposition from Archer where they just stand in the hallway and talk (exactly like the VN). This was spiced up with actual flashbacks in the anime. Then the real fight takes place over the next 1.5 episodes, which the anime set in UBW for a different setting, while also cutting in to the Lancer/Rin subplot every once in a while like the VN. I Really don't see any key differences.

That was never my criticism. In the VN the fight is very quick and involved. You feel Shirou's thoughts, and the pacing is fast, never receding. They fight each others, Shirou loses at first, and then pushes. They never stop the combat to talk.

The anime's combat is a huge disservice to what is one of the best scene in the VN. It pauses, and pauses, and pauses, for three full episodes, making a bore of what is one of the most suspenseful scene of the game. Honestly, without all irony, they should have gone full Shonenshit: a teen fighting with his teeth gritted and taking punishment. Everyone would have been more involved in that. We got a wishy-washy slow DBZ combat instead.

If a nobody can't appreciate the anime because he falls asleep in the middle, then you have huge issues. This is compounded by the fact that the first season did NOT have that problem. The first season is really almost perfect, and manage to do huge exposition with intriguing combats altogether, and manage to pull you into the thought process of the main characters.

The second season is a disappointment in comparison. There's really no excuses.

The anime was massively popular, it sold like 35k BDs per season, and an obvious success with normalfags too (see MAL reviews/youtuber shit). There were no issues with that. Your friend that didn't like it is more the exception, the action in the second season was still enough to interest most secondaries who didn't care about Shirou, despite it being the most Shirou-focused route.
Once again, I fully agree that the first season was better directed and produced, I never denied that, but you vastly overblow how different it supposedly was from the VN. I'll also take pacing that gets a bit too slow at times any day over DEEN's rushed mess of a movie that only wanted to get to the action scenes.

All of those things suck ass even more in ufotable's, though. They make flagrant changes to Shirou's behavior in many situations as well as reveal an inadequate amount of his narration to lead to the audience understanding him properly. That's what directly lead to the majority of secondaries currently considering him to be a generic, flat character. Rin's character is shallow and meaningless without the context provided by HF and the various Dead Ends that involved her, and none of the complexity of Shirou's relationship with Archer was carried over, again largely due to the narration problem. Most of his conflicting thoughts couldn't be expressed without making excessive changes to the story anyways.

DEEN's UBW isn't about adapting, it's about recollecting. It's the subtle things like the dutch angles, the character designs, the coloring, Kenji Kawai's music, and the emphasis on all the correct lines in the dialogue that makes DEEN's effective in that way. Structurally, S2 of ufotable's is as incoherent as DEEN's in addition to trashy animation in all the most important moments. The only way it stands above DEEN's is by virtue of coincidentally having more total content. Again, when neither adaptation is competent, you have to look for other things to enjoy.

Unlike Gilgamesh, he's still human in this moment, even if he's strong enough to win. He was so disadvantaged in every imaginable way there. The fact that he does anything other than charge forward contradicts the point the route and its subversion in HF. It's even topped off with a ridiculous Rho Aias moment that's supposed to be so epic even though Rho Aias isn't significant enough to Shirou's character to warrant that, makes absolutely no sense when considering Shirou's location at the moment, how it accomplished anything when surrounded from literally every angle, why he had to have the most EPIC timing for saying it's name possible, and that there already was a Rho Aias moment they screwed up before Shirou brought Gil into UBW. Caliburn's second clash with Gram at least added meaning across the scenarios.

As Nasu put it, this was the moment where Shirou shined brightest in his life. It was written to resemble an athlete going up against someone far stronger, faster, and more talented than him, but due to some circumstances or another, the athlete surpasses his limits and manages to beat the opponent. Shirou still wouldn't have been capable of servant-like feats of strength and agility, and he certainly wouldn't be lacking in exasperation. His access to Rin's mana pool only allowed him to put up Unlimited Blade Works, which represents the endless range of mental possibilities Shirou possesses as a result of his rebirth, but has no effect on him physically. It's destruction is also symbolic of the relationship between Shirou, Avalon, and Excalibur. In ufotable's anime, he literally turns into a servant for the extent of that segment of the battle, which goes against the entirety of what made him and Archer special. It's like giving Batman a Green Lantern ring.

Then we hang on Gilgamesh pointing GoB at Shirou for 8 seconds without doing anything to fill out the necessary length for the timeslot. A small problem but one that goes against the border between the reality marble and Angra Mainyu's consumption.
