The US ships, in general, carried smaller but more plentiful torpedoes with fancier gimmicks.
Such as intentional underkeel detonation, targeting, advanced torpedo fire control (this required special torpedoes, yes), all the way up to homing and ASW torpedoes.

It's not really a question of better or worse, it's a question of tactics and doctrine.
To put it in KanColle terms, the Mark15 (late war only) would be weaker (less boom), but more accurate (more torpedoes per spread AND better targeting) than their IJN counterparts.
This isn't even getting into the issue of keel breaking (which actually started happening late war), which honestly can and should be ignored due to gameplay mechanics issues - just say that's a Torpedo Critical hit and call it a day.

They had shortages of armor and perhaps even steel. Perhaps the British took shortcuts when building or repairing some of the later carriers. They may have not let the Americans fully repair their carriers whenever their ships had to go to an American shipyard either. Perhaps for their part the Americans probably couldn't spare them the steel at least not without increasing the cost since the American made steel was needed for repairs and construction of their own ships. Not fixing shaft problems that cause your carriers to slow down is a doctrine problem. Hell what I typed even agrees with the statement you just posted(second post), Armored decks let your carrier keep fighting for the short term when hit(unless it's an armor piercing bomb).
