I've actually thought the official manga that I've read have been pretty decent so far as supplements to the games. FS is a cute thing that had pretty early build-up to the idea that Suzu might be murdered by Reimu, confirmed halfway through that that's a legitimate potential outcome to worry about, and that's not something I was really expecting from a series that bends over backwards to make even the worst evils into harmless fun. Kasen's story is ongoing, but it's been good exploring her relationships and following up on different plot points from the games, like what Sumireko ends up doing after going home.
What complaints do people tend to have about them? Is it just that they're slow, or does it have to do with how they really are just supplementary materials?

Part of the reason he isn't interested in making an anime is that the industry underpays and overworks animators and is generally really shitty, and he doesn't want to be a part of that. Similar reasons for not being fond of Japanese corporate culture, but the anime industry is particularly egregious.

one of the reasons ZUN doesnt want there to be an official anime because he doesn't want to have the characters have an "official" voice. He'd rather the fans be able to imagine their own voices and not have their idea of a character be hurt by the portrayal
