They don't, the beef between the Taoists and Buddhists in Touhou is more personal than anything else, the two religions are actually not extreme opposites as much as they just focus on different thing, with Taoism telling you to chill, enjoy life and don't create conflict where there is none, while Buddhism tells you to let go of attachments to the material world and to not harm other living creatures.
