I played touhou 15 last night since haven't in a long time. What the hell happened to Marisa? I mean she used to make me laugh and had at least something to say. It doesn't even seem like the same character here.

This. I sometimes die to Shou's first attack just because it's so fucking confusing, even though there's literally almost nothing in terms of bullet density. FUCK curvy lasers. Shou's not the only one that gives me trouble with them, either.

I'd like to see some characters that haven't been playable in any mainline games yet (maybe even ones that aren't stage 5 bosses but still could work as playable characters like mokou or seiga or something), also I want the graze-based resource system from LOLK or something similar, I thought it was really satisfying to see and hear when you were grazing more clearly and get non-point rewards for doing so.

No it's been made pretty clear that the urban legends stuff is still going on, it might be resolved in 15.5 though who knows.
