Hey guys let's bring in Science. Sorcery isnt really something from nothing it's actually conversion of dark matter into normal matter.

Reality Marbles are a high-form of magic which can create scenarios near the level of sorcery, but RMs aren't sorcery in and of themselves.

For one thing, you can't control how they develop. They're a reflection of the internal world of the caster. Another is that they can't be sustained for long, as the World crushes them for intruding on the outside. Another is that the effects of a Reality Marble are only temporary in their scope. You can't have a long-lasting effect. Shirou's world and the swords in it will disappear, Zepia's Night of Wallachia will end at dawn, etc. Things affected by the Reality Marble are still affected at the end of it, but nothing survives of the Reality Marble itself.

So, it's a forbidden magic, but not sorcery.

Crests and circuits are used for many purposes, like Shirou in Realta nua gives part of his circuit to Saber to be used as raw energy so she can recover, Kotomine sacrifices it to remove Sakura's worms, Rin gives a part of her crest onm HF Shirou to help with the arm situation.
And in Kariya's case, the worms forcibly open his ciruits, which he couldn't use on his own, while crippling him.

Think of it like this:
To kill Sakura, you need to do what would kill a Shirou with Avalon and contract with Saber (or if you read comics, Wolverine)
Aka, cut off the head, and run away with it or turn it into dust/nothingness.
If you just slice or cut body parts, they will reconnect.

Rin = 40 magic circuits + Crest which = 60 magic circuits = 1000 maximum output.

Sakura has something similar except instead of a crest she has the grail shit .. so they are both stuck at 1000 maximum output.

They wont get any higher from training all that does is give them new ways to use said output.
