It was half theory, half false info from before the endings were translated when the game first came out.

Anyway, there's just no indication in canon how her son died. Only that Houyi killed him.

Junko's son's death being related to the sun, whether it's falling on him or being a sun himself (another theory) was just a mix up between Junko and Hecatia's reasons for hating Chang'e and Junko being mixed up with another Chinese character (Xihe) before Junko's myth origin was discovered.
