I prefer two sonars because I have shitload of them and they give accuracy which matters in red morale. But really, it depends. DC + Sonar is stronger, especially on ships with higher base ASW so they might get the MVP more often if flagship aims for gold sub or the escort scores a crit. Honestly, no idea. I often tab out and the subs have so bad accuracy that half of their hits are crits so it's hard to judge the evasion boost. What I can say is that I usually have +1 T3 sonar and normal T3 sonar on them because swapping them around is a pain and I always have 5-10 ships ready for 5-1.

Single fleet is the only one I bothered to fully list setups for in that link, because for most of them max 46cm (or max 51cm, for those who have them) is the best gun for that. So I'm only going to talk about combined fleet setups here. I'll take into account the fact that combined fleet's accuracy is generally shit, but the escort fleet in kidou and the main fleet in suijou have especially shit accuracy. The fact that the damage cap at night is higher shouldn't complicate matters much for escort fleet, because BBs' double attack at night doesn't do much damage anyway, at least compared to the torpedo cut-ins everyone else is doing. (But really, only 3 BBs have any business being in the escort fleet: Bismarck, Roma and Kirishima).

Forgot to add: hotels are easy to calculate for, and their firepower is an outlier. In single fleet use 46cm assuming chuuha doukousen, in suijou main fleet use 51cm/46cm assuming red T (if you don't have 51cms they'll fail to hit the cap, so read on), but in kidou they flood the cap too easily in chuuha doukousen but fall just short of the cap in red T, so here the setup is up to one's discretion. Maybe just stick to the guns that give them the highest accuracy. I have doubts that any gun is fit or overweight on them, so might as well go with 2x 38cm kai (or 2x 16in when you get more of those and they become upgradable).

So here goes.

In kidou main (assuming hankousen):
Haruna needs 46cm/381mm Kai or 46cm/proto 41cm.

In kidou escort/suijou main (assuming hankousen):
Haruna needs 381mm Kai/38cm Kai.

Bismarck, Fusou, Nagato and Mutsu need proto 35.6cm/38cm Kai.
Italia, Kirishima and Roma need 38cm Kai/38cm Kai.

In suijou main (assuming chuuha doukousen):
Nagato and Mutsu need proto 51cm/proto 51cm. If you don't have proto 51cm, aim for hankousen instead (see above).

In suijou escort (assuming hankousen):
Haruna can't hit the cap (so just give her 46cm/46cm).
Kongou, Hiei and Bismarck need 46cm/46cm.
Italia and Kirishima need 46cm/381mm Kai.
Roma needs 46cm/proto 35.6cm.

To calculate the number of each gun you need to have:

1. For each of kidou main, kidou escort, suijou main and suijou escort, make a list of all the BBs you might possibly use, as well as ONE pair of guns that allows her to reach the cap without compromising too much accuracy (i.e. the pairs of guns listed above). Most of them only have 1 choice that stands out as the outright best, but for some pairs there might be some dispute as to which is better, so I listed the top 2 pairs; choose only ONE of those two.

2. For each gun, check the maximum possible number that you might possibly need, given all possible permutations (up to 2 BBs in kidou main fleet, up to 4 BBs in suijou main fleet, up to 2 fast BBs in kidou/suijou escort fleet). You will get 2 numbers: one for kidou and one for suijou. Take the higher number of the two. Do this for every single gun.

Note that no matter how you calculate it, you will need to upgrade at least one of each of the listed guns to max. I am also of the opinion that 16in guns are by far the best guns for support fleet, and should be stuffed there instead, so proto 41cm will remain relevant here until we get the option to farm more 16in guns.
