It's from Junko's back story/profile and Chinese mythology. Junko is actually a real mythological figure, but even the Chinese have spotty records of those old stories and ZUN kind of mashed together two only slightly related stories into the clusterfuck that is Junko's back story.

Regardless this means that Junko's real name is Xuanqi and her son's name is Bofeng.

If you ignore side materials and just focus on the games themselves, lack of male characters in them makes perfect sense, since they are about Reimu solving incidents through danmaku combat, which is pretty much a female sport in Gensokyo. Even if male villains were causing trouble, they wouldn't battle her by danmaku rules because most men don't want being caught doing girly things in public. So unless an actual faggot decides to invade Gensokyo (which I could totally see in a few installments once ZUN runs out of other ideas to troll his fanbase), you'll never see male characters in the games.

The complete lack of relevant male characters in side materials, which should be the main worldbuilding outlet, is pretty alarming though. But in the end the main selling point of this series is being yet another masturbatory material for otaku, so people just don't care about this.

No, Houyi just flat out shot Junko's sons, who were the sun birds. Also, since ZUN likes crossing myths, Junko's last surviving son is probably also hanging around in Gensokyo inside Utsuho.

It's also feasible that Sagume prompted Houyi into shooting the suns to begin with.
