Byakuren doesn't follow Buddhist principles herself though. She wants to help others, but her heart is too weak to go without helping herself along the way.

Buddhists are supposed to desire nothing and fear nothing, but Byakuren feared old age and did not want to die, even if it meant giving up her humanity. More than that, she feared being ugly so she made herself beautiful.

In Buddhist cosmology, youkai are "glitches" in a world which normally follows the law of Dharma. Youkai can be harmed or killed by sutras because they describe Dharma, thus reminding them that they are things that SHOULD NOT BE. A Buddhist willingly turning themselves into a youkai (and helping youkai instead of destroying them) is about as blasphemous as it gets.

Despite all that, Byakuren is a good person. Just don't question her devotion to Buddhism because she will not take it well. At all.

Enlightened beings are, which Byakuren isn't. She pretty much admits in SoPM that she wasn't properly following Buddhism back then, but now she's trying. There's no problem with that.
In early Buddhist cosmology, there are no "things that should not be". There are no sentient beings that are not to be helped or barred from learning either. I've never actually seen anything about youkai in Mahayana canonical works, but then again I don't know everything about them.
Within the 2hu universe though, if Bishamonten has no problem with Byakuren it probably means that her existence is not problematic.
