I'd argue that's just semantics. In real life, you're absolutely right. If someone "revives" in real life, they weren't dead to begin with pretty much by definition. But real life also doesn't have the undead or magic. You can't raise someone from the dead or create immortality potions.

If you define death as the absolute and completely irreversible cessation of all bodily activity for all of time, then they cannot die. If you drop the irreversible clause (which isn't really necessary in reality) then they can.

Some things are just different, like Youkai Mountain being much taller than the equivalent Yatsugatake in the outside world. I'm not sure about that. The substance of Gensokyo is separate from the outside: a pit dug inside doesn't disturb soil on the outside and vice versa. IIRC it's mentioned that the moon voyage in SSIB was conducted without ever crossing the barrier, too. It seems to me that Gensokyo could keep on ticking just fine even if the outside went all to hell. Physical pollution is less likely than conceptual pollution thanks to things becoming fantasy in the real world.

Another example: if a real river enters the 'Soak from outside it would necessarily have to split in two without diminishing, as it flows into the real space and the illusionary space both. Safer to say that no such thing occurs.
