Actually I do argue that you can adapt Maribel and Renko tales into pretty good short animations, stuff like Maribel getting lost in the bamboo forest, the ghostly field trip, the train trip from Kyoto to Tokyo are all pretty interesting.

I'm pretty sure they have more characters than Merry and Renko. They've even had Byakuren planned out

The shittiest stuff to adapt would probably be Cage in Lunatic Runagate. The stuff about Mokou is probably the only good thing in there that might be cool to watch.

Actually., an anime about SSiB and Cage in Lunatic Runagate might be the only entertaining materials for casual viewers since it has enough action and plot for people to care.

The hardest stuff to adapt is actually CoLA since it doesn't really work if you animate it/stop relying on Rinnosuke's narration.

Cage in Lunatic Runagate on its own is probably the most boring thing Touhou has to offer. Pretty much everything it could use to entertain someone who isn't already a big fan that needs more Touhou comes from SSIB.
