Nono, the human village isn't a food supply, it's a spiritual supply.
The main thing youkai need to live is people that believe in them, not food. So Yukari created this place to captivate some humans and keep them ignorant since in the actual world people began to stop believing in youkai etc.
The food supply is still the outside world via uknown deaths, suicides for no reason etc. (ZUN explains it somewhere).

The human village is like a protected zoo (iirc Kanako compared it to that) where people give spiritual supply to youkai, Gods and stuff.

Yukari is hardly beaten often. The few scuffles in the fighting games and the phantasm stage of PCB do not indicate that she is weak, as she has no reason to go all out and defeat her opponents. Danmaku restrictions also apply here.

As for the moonbitches, regardless of whether or not Yukari could fight against them, all she needed to do to "win" the second lunar-Gensokyo War was to distract the moonbitch. The first war was lost intentionally for the purpose of Yukari gaining political power.

Yukari is, as she created Gensokyo.

Youkai and Gensokyo never originally existed in reality. Maribel Hearn, having the ability to see "boundaries" was able to see the boundaries between fantasy and reality. Having an interest in Japanese folktales, as did Lafcadio Hearn, she brought a fantasy land into being and populated it with mystical creatures for her own desires. This is why everytime a new magical creature is brought into Gensokyo from the "outside world" it is done so by Yukari. She also edits Akyuu's writings so that things in Gensokyo will seem as she sees fit.

How Maribel did this is probably related to the fact that her powers seem to be growing in the stand-alone music CDs. This would somehow be in combination with Renko's vast knowledge of physics, as Yukari is a master mathematician and probably utilizes her math skills to use her gap powers in the first place. They also live in the future, so future magics.

Eirin is Omoikane who is most certainly a god, was born a god, and will be a god for the foreseeable time.

Being a god in Touhou doesn't automatically grant you immortality, especially with Buddhism and Samsara being a real thing. Hence the lack of true immortality shouldn't be seen as a sign of the lunarians' non-goodhood-ness... thingy. In fact, the presence of Tsukuyomi who is most certainly a god, was born a god, and will be a god for the foreseeable time would suggest there must be other gods living on the moon.

Celestials aren't truly immortal as well, they just know the secret to beating death gods. If they lose they'd still die.
