Unlimited Blade Works represents his ideal and personality. A barren world in perpetual sunset. Nothing exists except countless blades, standing at ready to be used. It is everything about him as a person.

He defeats Gilgamesh because Gilgamesh is his shadow archetype. Representing the hedonism and selfishness that is everything Shirou is not. Shirou wins because his ideal of heroism is stronger then Gilgamesh's selfishness.

The "King of Heroes" uses is original weapons only for himself. They stand behind him, ready for his use alone, in direct comparison to the weapons of UBW, which stand ready for anyone to grasp. His selfishness in the end can not even beat the borrowed, fragile, almost fake ideals that Shirou has.

The deal with Shirou is that his origin is swords, and so is his affinity. This is due do Kerry sticking Avalon up his ass and letting it sit there for ten years. What that means is that he's the best in the world at the one spell that he's able to use.
