There's a list on the Touhouwiki of every(?) album released, but not a chart showing their genre or anything like that.

There's K-Waves LAB and Casket, and piroparu does flute-y folk-y arranges, but I wouldn't really call them Irish.

Oriens does incredible orchestral arrangements when they're not doing shitty vocal albums.

Reiche does a lot of recorder stuff. Good when I'm in the mood, kind of annoying otherwise.

Fragile Online did a Touhou/Beatles crossover album, apparently.
