I made onigiri today for the first time.

Rice taste: perfect. Consistency: mushy. I need to use shorter grain next time.
Filling: Tuna mayo. Perfect taste.
Nori: Seemed to be very good quality.

All in all, a success. Pleasantly surprised.

I just told him to use a generic cookie dough with eggs, flour, sugar and no milk. You'll find tons of them on the internet or in cooking books. This one look good:

For the dark parts add a bit (maybe 1/2 tsp.) cacao to 1/2 or 1/3 of the dough. Follow to recipe when baking and you're done.

I don't like going to the doctor either, but it had gotten so bad I wasn't able to feed properly anymore. She prescribed me months-worth of antibiotics that have helped a little.

I still don't feel comfortable saying what condition I have, even though this is anonymous... but I'd probably be dead by now if I hadn't gotten treatment because it's the kind of disease that can develop into another. It might be scary to go to the doctor and admit the discomfort you're feeling might be something serious but you must have in mind that no one else can look into that in your place and that your well-being should take priority.

Using short grain rice and glazing it with rice vinegar and then cooling it a little helps it stick together. I just used jasmine rice (which is long grain which is why it didn't stick together perfectly either) which I washed with water first, then cooked with 2:1 water/rice ratio until water was gone.

Also added some sugar and salt to the rice vinegar.

Next time I'm going to use a regular short grain rice used for normally making rice pudding, because it's a decent substitute for actual sushi rice. We don't have any sushi rice in the shops nearby.

Just rolling the onigiri long enough in your hands, like when making nigirisushi, will make it stick together I guess.

Calrose rice is a pretty good substitute for japonica. I've made onigiri with it a few times. I usually boil sugar, salt, white vinegar and mirin together and fold into the rice once its cooling.
