Here's a trick if to find out what something is called in another language you don't speak, go to the wikipedia article, look at the languages list on the left, click on the language (日本語 in this case, which is under N). Now, feel stupid because the article for role-playing game is titled rooru pureingu geemu because they call them RPGs too.

The kanji for "role" and "playing" are 中 and 出, respectively. "Game" is a word written with kana (し).

Seriously, though, they just say it in English (or rather, the closest equivalent they can spell). Though when you check wikipedia's article on "role-playing", it does link you to Japanese 役割演技, so I guess you could use that if you really need to be a weeaboo.
