Shiki remains relatively unchanged throughout Tsukihime as his entire philosophy is based upon what he learned through Aoko. When placed in different and unique situations, Shiki's core character doesn't change, so he'll end up reacting similarly. While he may be a badass character, he's really not a good protagonist.

tl;dr: Shirou develops, Shiki doesn't.

Besides, this makes for a really badass CG.

Lack of awesomeness isn't what makes Shirou annoying protagonist, in my opinion. What makes him annoying is the fact that his awfully generic "young hero character with unawakened powers". I don't think that anyone disagrees that naive and idealistic young fellow could be a good protagonist if done properly, it's just that Nasu pretty much fails. But this isn't suprising, as Nasu isn't in the end even mediocre as a writer. He makes up interesting stuff, manages to create good atmosphere and I do like his works. But just when you think "hey, this could be considered as somewhat good piece of literature" he hits you with generic animu shit.

Actually, I think he did okay with that mold. I believe that Nasu said (lol, "Nasu said". That's comedy gold) that he wanted to show something about phases that a child goes through growing into an adult, and an contrast of ideals works pretty well for that. There are far worse examples of idealistic heroes that come to mind (Hello there, father-killer Suzaku).
