It's more about how Satoko wasn't shit from the start and tried to make things work out but life just crushed her, and then the loops crushed her even more.

Witch Satoko is still crazy and homicidal, but at least you don't get the impression Satoko was one step from this all along. It's clearly a product of the century of loops breaking her rather than high school antics.

Also minor point but personality-wise, she also seems to be allowed to be more lively and silly in her witch persona, while Gou/Sotsu seemed to keep the red eyes to scenes they thought were "cool".
