She would only kill you if it were truly beneficial to her. She murders people because she has a reason for it, unlike Bern who just murders people for the heck of it.
Erika is a sadist in that she likes to make people suffer, mostly mentally, but she is not a destructive sadist. In episode 6, she could have just try to permanently get rid of Battler after he lost, but instead she went through all the trouble to make him her slave - she doesn't want to destroy, she just wants to play with people in a cruel way.

Also, it must be noted that the six people she murdered would eventually be murdered anyways (you can fake six deaths, but eventually real murders will start happening), and that if she did not murder those six people to immediately win the game, more people would have died.

tl;dr: Erika is a sadist, but she's not an insane random murderer.
