Not sure if you're implying the End islands stop generating after a while, forming a donut, but that's not true. As long as you have pearls/bridge blocks you can pick a direction and continue moving forward.
The problem she's having is that she keeps turning around making a huge beeline everytime she finds a big void, which may look like the border of the islands biome but it actually isn't.
