Usually it's off to the "next world", but the details of the afterlife in the MGE is still largely a mystery. Getting reborn as something else is also possible if a god intervenes (like what happened with this mermaid who sacrificed herself to stop a war and got reborn as a undine thanks to Poseidon).

And for any monster that dies with regrets, resurrection as a undead is possible.

For a canon example, one can look to the story of Prince Caspar and the mermaid Difina. Lots of struggle and hardship and tension in that tale, with only a declaration of life-long servitude and literal divine intervention giving a happy ending.

He's clearly fine with death so long as its followed by revival. Heck as shown with Difina it doesn't even have to result in an undead.

For some examples of canon tragic stories, you have:

1. Francisca, the sickly royal pariah who lost her only friends growing up and ended up bedridden and suicidal.

2. The "you" from Fallen Maidens who ended up on the street with his parents for befriending a girl above his class, said parents later dying and resulting in the boy living in an orphanage for the rest of his childhood.

3. Merse, who's own mother blinded her in one of her eyes and abandoned her father.

4. Saphirette who studied for years and gave up potential esteemed positions for the sake of helping her impoverished homeland, only to have her requests for aid rejected because her home was regarded as unimportant to the Order.

5. Prince Caspar from Al-Mar whose life consisted of almost Game of Throne-style political shenanigans and war, culminating in his lover, the mermaid princess Difina, sacrificing her life to save everyone (and thankfully being revived by Poseidon herself as a undine).
