Well... starting with the obvious, Touhou oni are not aliens but mythical creatures in the classical sense. Although I guess it's not impossible the UY oni too are mythical creatures from their planet, seeing how *everyone* in that show seems to be from space.
Second, outside of brute strength Touhou oni have abilities that are either mystical in nature or left unexplained, while UT oni have abilities that are (pseudo-)biological in nature.

As for fire and electricity, those seem to be individual powers in both series, and not default racial abilities.

Think of her "gigantification" as...Taiga's M0 field. Whatever get touched within the M0 field gets erased. Suika's is the exact opposite. Everything outside of her "M0 field" gets shrunk. Since her clothes, gourd, even the littlest microbes are inside her M0 field, they stay the same no matter how small Suika makes the world.

Isn't Suika's scenario in IaMP considered the official one because it's Ending 1?

She's one of the few characters that actually won a fight against Reimu. Suika is still awesome and broke. She'll remain a eX boss for a long time.
