this questions comes from misunderstanding. you never stop getting used to kanji but you also can never know kanji. so a. you can't learn joyo and b. you will slowly get used to more kanji as you read more. think of how you see new english words a lot if you read good shit.

jap grammar is pretty easy. i say after 1 year of consistent reading you will have a solid grasp of all grammar not just demo. No need for any more study than a 2 hour skim of old tay tays guide. good luck studying when you could be reading.
