We'll probably never see it in the Touhou series itself, but it would be interesting to see how Chen 'grows up'.

In a sense, she's already an adult, but it all depends on your definition. Chen first had to grow up into a older then usual cat, she's lived the full life as a wild cat in Gensokyo. Then she became a youkai and came around to the girl we know and love today. However, she clearly still thinks and acts like a cat, unlike Ran who is clearly a sagely youkai now well beyond merely a fox demon of some kind. So it's fair to say Chen is young and childlike.
