Maybe a professional can get it right in one shot. For the rest of us, there's photoshop.

Like >>7682715 said, look into saving your files as RAW+JPG instead of just jpeg. It's a bit more space intensive but flash memory is cheap. Since RAW files are in plain words, raw sensor data, it's pliability is more powerful than modifying a compressed image such as jpeg. In a nutshell it's like working in a digital darkroom and your photos can be adjusted so they look better as if they were shot that way.

e.g. a photo taken in a poorly lit room. a single cfl and not a lot of light to go around with. This was shot at ISO800 with the white balance set to "auto." "According to the camera" the exposure was just fine with the wide aperture and slow shutter speed I selected. but the results are pretty dismal as you can see. With the raw photo, a couple taps of the sliders and the whites are now balanced and the limes look more ... limey. And that's just the tip of the iceberg.
