In Lovecraft's works people break when they face undeniable evidence that all the shit they saw before is real.
Horrors they encounter are usually disgusting and terrfying, but at least there's always a possibility that it wasn't real (at least not all of it) which makes coping easier. But to see Chtulhu in the flesh is to face not only something absolutely brain-bleachingly horrid, but also the very fact that it is real and the implications that follow. To look back and see SOMETHING staring at you from the caves is to face the fact that yes, there indeed was something there with you all along and all the stuff that you saw was true and really did happen. It's more of an existential kind of horror, the one that shatters your worldview and forces to process the new reality of things, rather than straight up jumpscare. Like in 'The Truman Show', after realising that everything was a part of a TV set Truman can't just pretend that everything is okay, so can't Danforth from 'At the Mountains of Madness', after seeing something back in the Antarctica just go back and pretend that the world is the same.
But this kind of stuff, as it so often happens with literature, is lost when other types of media try to adapt Lovecraft's work and we get a theme park version of the horror, with all the tentacles and no actual scares.
